This Fontina by L. Monterosa is produced exclusively in the Aosta Valley, where the region’s combination of herbs, flowers, and pure water gives the milk a unique fragrance. Production of this DOP Fontina begins a few hours after the cows’ milking, beginning with a salting treatment that is followed by an aging period ranging from four to five months. During this period the cheese is treated daily, mostly by hand, with regular cleaning of the cheese’s surface until it is properly matured. This process gives Fontina a soft texture and a sweet, delicate flavor.
