Montasio Stagionato is made according to very strict DOP regulations to ensure consistent quality. DOP regulations stipulate that only the milk from a local red-spotted cow breed is acceptable, with an exception for a small number of Friesian and Alpine cows. Once gathered, the milk is put through a century old process, which culminates in the cheese maturing in special storerooms with strictly controlled humidity and temperature conditions. As the cheese ages, it becomes drier and more flaky while transitioning from sweet to fragrant and slightly tangy.
