Moulard duck breast by Rougie is a delicious red meat breast cut from a duck that has been bred and fattened for foie gras production. While excess fat has been trimmed from these this moulard duck breast, the layer of fat that remains under the skin makes it more tender and provides a very different experience when compared to unfattened duck.
Suggested Applications: Easy to sear, grill, roast, or barbecue, moulard duck breast is best served medium rare. When served medium rare, the duck will be tender and juicy with a rich and meaty flavor.
