    A gourmet wine vinegar, Solera 77 Sherry Vinegar has been made with sherries to give it a deep, complex flavour. In order to be considered a true vinagre de Jerez, Solera 77's Sherry Vinegar has gone through an aging process in American oak for over 6 months, has been aged inside of Spain's Cáz province within what is known as the "sherry triangle," and has a minimum of 7% acidity. Solera 77's Sherry Vinegar production and quality is regulated by Consejo Regulador and has its own Denominación de Origen, protected by EU and Spanish law.
